Northern New Mexico Salsa
Marlene's Salsa
Ingredients
- 4 or 5 garlic buds
- 1/2 to 1 bunch cilantro
(depending on size of bunch)

2-3 bunches green onions
with greens

3 green jalapeno and 1
yellow jalapeno (with seeds) (or 4 green jalapenos)

2 (14 ounce cans) of whole tomatoes

juice of to 1 lime

avocados - diced

Whole fresh garden tomatoes diced
- Caldo (to taste - maybe about 1 teaspoon)
- Garlic Powder (to taste)
- salt
Preparation
- I use my food processor.
- Process the ingredients separately. Otherwise if you keep adding the
ingredients altogether it will end up like mush.
- Mix together in a big bowl
- Chop garlic buds very fine.
- Then cilantro.
- I remove garlic and cilantro from food processor
and add to big bowl.
- I cut the
onions with greens into about 1 inches and add a little tomato juice and process
just a few seconds so that the texture remains and add to big bowl.
- I chop the canned tomatoes just a
couple seconds, just enough so to leave pieces of tomato.
- Add diced avocados to big bowl
- Add diced fresh tomatoes to big bowl
- Add Caldo, Garlic powder, lime and salt to taste
.(For smaller amount, divide
recipe in half)
