Fruit Cocktail Cake

Grandma New's recipe

Ingredients

1 lb can fruit cocktail (with juice)
2 eggs well beaten
22 C flour
1 1/2 C sugar
2 t soda
1/2 t salt
TOPPING
1 small can pet milk
1 stick of oleo
1 C sugar
1 C coconut
1/2 t vanilla

Preparation

  1. Mix fruit and eggs.  Sift next 4 ingredients together and add to fruit mixture.
  2. Pour into greased 13 X 8 pan and sprinkle 1/2 C brown sugar mixed with 1/2 C nut meats over top of batter.  Bake at 350 degrees for 35 - 40 minutes, remove from oven and pour on topping.<
  3. Topping:   Boil milk, oleo and sugar 2 minutes, then add 1 C coconut and 1/2 t vanilla.
