Caramels

Ingredients

2 C sugar
1 C light corn syrup
2 C half & half cream
2 T butter
1/2 t salt
1 t  vanilla
pecan nuts (optional)

Preparations:

  1. In a 4 qt. saucepan cook sugar, syrup and cream.  
  2. Bring to a boil and let cook for about 5 minutes.
  3. Add butter and continue cooking on high heat to 246 degrees.
  4. Stir constantly. 
  5. Remove from heat and add salt and vanilla and mix gently.  
  6. If nut caramels are desired, add broken pecan pieces and mix in.  
  7. Pour on well oiled slab or in a pan well greased.  
  8. Cut when cool.  
  9. Caramel should be dipped in chocolate coating.
