Coconut Bon Bons

Ingredients

1/2 C w syrup
1/2 C honey (or use 1 C syrup)
3 C coconut

Preparation

  1. Heat w syrup and honey together to 230 degrees.
  2. Add 2 1/2 to 3 cups of coconut until it bakes up the syrup.
  3. Let it set until you can handle it.
  4. Coconut can now be hand rolled into centers for bon bons.

It is easier to roll if hands are kept wet while rolling.  These centers are now ready for dipping in a pastel coating.  They will, however, be easier to dip if set aside for several hours or over night, after hand rolling.  This will let the surface of the ball dry out and become firm for easy handling.  These coconut centers can also be dipped in chocolate coating.  This recipe will make approximately 30 coconut centers.
