Peanut Brittle

Ingredients

1 C w. syrup
2 C w sugar
1/2 C ice water
1 lb. raw peanuts
3 t baking soda
2 T butter
1 t vanilla

Preparation

  1. Boil the syrup, sugar and ice water slowly stirring to 236 degrees (soft ball stage)
  2. Add peanuts.
  3. Boil again to 295 degrees (hard crack stage)
  4. Boil very slowly to this stage.
  5. Remove from heat and add baking soda, butter and vanilla.
  6. Stir quickly then pour on greased metal pans.
  7. Butter hands, turn quickly and stretch to edge of pans.
  8. Break after 10 minutes.
