White Fudge

Ingredients

3/4 C evaporated milk
3/4 C water
3 C granulated sugar
3/4 t salt
3 T butter
1 1/2 t vanilla extract
3/4 C marshmallow cream
1/3 C candied fruits (chopped)

Preparation

  1. Combine evaporated milk, water, sugar, salt and butter.
  2. Mix thoroughly together in three quart sauce pan.
  3. Heat to the boiling point over moderate heat.
  4. Cook to soft ball stage -- 236 degrees -- stirring constantly.
  5. A full rolling boil should be maintained throughout.
  6. Remove from heat.
  7. Cool at room temperature, without stirring, until lukewarm (110 degrees).
  8. Add vanilla extract, marshmallow cream, chopped candied fruits.
  9. Beat again until mixture loses its gloss and is very stiff.
  10. Quickly spread into 8" square buttered pan.
