Pizzelle

Christmas Cookies. Grandma Amelia always made these at Christmas time. Then Vic Wuertz made these. Now Christi Hardy and Levi Wuertz are making them.

Recipe #1 Anise

1-3/4 Cflour
3/4 Csugar
1/2 C butter melted & cooled
1/2 tsp vanilla extract
2 tspbaking powder
3eggs
1/2 tsp anise

 

Recipe #2 Citris

3 eggs
3/4 C sugar
1/2 C butter (melted & cooled)
1 tsp

lemon, orange or lime flavorings or oils or grated

1-3/4 C flour
2 tsp baking powder

 

Recipe #3 Chocolate

1-3/4 Cflour

3/4 C + 3 TBLS

sugar
1/2 C butter melted & cooled
1/2 tsp vanilla extract
2 tspbaking powder
3eggs
3 TBLS coco powder

 

Recipe #4 Almond

1-3/4 Cflour
3/4 Csugar
1/2 C butter melted & cooled
1 TBLS almond extract or Amaretto
2 tspbaking powder
3eggs
1 C finally choped almonds

 

Recipe #5 Southern Italian Pizzelles

1-3/4 Cflour
7 C sugar
1 C butter melted & cooled
2 tsp vanilla extract
4 tsp baking powder
6 eggs
1 tsp anise

 

Preparation

  1. Preheat pizzelle iron and lightly coat with nonstick cooking spray
  2. In a large bowl, combine ingredients. Drop slightly rounded tablespoons of batter on pizzell iron and close.
  3. Bake as directed by the manufacturer or until golden brown. It took us 25 seconds but may take 1.5 minutes.
  4. Remove & cool
  5. Dust with powdered sugar is Optional. Grandma Amelia never dusted with powdered sugar.

Optional Frosting

Ingredients

orange
2 C butter
1 t powdered sugar

Preparation

  1. Grated rind of 1 orange
  2. 3 T orange juice
  3. Butter and powdered sugar to spread.
