Vanilla Ice Cream (custard Base)

This custard takes a little more time and effort, but a sxmooth textured cream is the reward.

Ingredients

2 1/4 C Sugar
6 Tablespoons Flour
1/2 teaspoon salt
5 C Milk (scalded)
6 eggs
4 C Heavy cream* (for extra rich ice cream use all cream and omit milk
4 1/2 teaspoons vanilla

Preparation

  1. Combine sugar, flour and salt in saucepan.
  2. Slowly stir in hot milk.
  3. Cook over low heat for about 10 minutes, stirring constantly until mixture is thickened.
  4. Mix small amount of hot mixture into beaten eggs.
  5. Add to hot mixture and cook 1 minute longer.
  6. Chill ion refrigerator.
  7. Add cream and vanilla.
  8. Pour into gallon freezer
