Calavacitas

Ingredients

1 t olive oil
2 cloves garlic
4 summer squash or zucchini (medium size)
1 Can Rotel Tomatoes and Green Chilies (for spice) or 1 can tomatoes
1/4 C milk
1/2 C green chili (chopped)
1 onion (chopped)
1 can whole kernel corn (drained (fresh corn is even better) or frozen)
1/2  cheese (grated)
salt
pepper

Preparation

  1. Saut onion & garlic in oil;  add squash, rotel or tomatoes and chili. 

  2. Mix and cook covered for 20 minutes.

  3. Add corn and seasonings and cook 5 minutes longer. 

  4. Add cheese, stirring constantly to prevent sticking, until cheese melts.
