Chili Quilles

Picked this up from Vicki who picked it up from Roy who picked it up in New Mexico.  mmmm.

Ingredients

Chicken Cooking Ingredients
? Jane's crazy salt
  dillweed
  thyme
  rosemary
  bay leaf
  onion
  pepper corns
  salt
  chicken
Red Chili Sauce (enchilada sauce)
½ cubebutter
3 to 4 T flour
3 C Chicken Broth (3 C water with 2 or 3 t Caldo)
1 1/2 T Chili powder (Chimayo is best)
Main dish Ingredients
1 BagTortilla chips
?chicken breast
?

cheddar cheese

  Eggs (scrambled)

Preparation

Prepare chicken & chicken broth

  1. Cook the chicken with the above chicken cooking ingredients
  2. Add Caldo or chicken bullion cubes to taste
  3. Shred chicken
  4. Strain and Save the broth

Preparation for the Red Sauce:

  1. Melt the butter in a frying pan and slowly add in the flour, stirring constantly. 
  2. Stir until a consistency of a paste and a golden brown color.
  3. Add the chicken broth to the golden brown flour and butter.
  4. Sprinkle in or add chili powder until the desired spice and hotness. 
  5. Stir until it's thick and smooth
  6. Add more flour if not thick enough
  7. I suggest you taste and add more chili powder until the desired taste.

Preparation for eating

  1. Scramble some eggs
  2. Slice the chicken into chunks or long square strips.
  3. On a plate, break up some tortilla chips. 
  4. Add a layer of the scrambled eggs.
  5. Add a layer of the chicken strips. 
  6. Add a layer of cheddar cheese. 
  7. Add a layer of the sauce. 
  8. Eat, or layer again and eat.
