Healthy Wraps with Peanut Sauce

Ingredients

1/3 cup soy sauce
cup rice wine
2 cloves garlic, minced
6 oz cooked chicken strips
1 cup cooked white or brown rice
2 tsp. chopped mint
cup julienned carrots
cup chopped red cabbage
cup bean sprouts
cup finely chopped cilantro
3 green onions, chopped
cup Spicy peanut sauce
4 tomato or spinach tortillas

Spicy Peanut Sauce:

onion, minced
2 Tbsp. vegetable oil
-1 cup peanut butter
2 Tbsp. lemon juice
2 tsp. sugar
1 Tbsp. soy sauce
tsp. red chili pepper.
1 cups coconut milk

Preparation

Whisk together soy sauce, rice wine and garlic; add chicken and marinate at least 1 hour. Spread cup rice over each tortilla, leaving about a 1 border at top and bottom and a 2 border at sides. Divide chicken and vegetables among the 4 tortillas and top with Peanut Sauce. Wrap them up.

Spicy Peanut Sauce

Saut minced onion in vegetable or canola oil. Stir in peanut butter, lemon juice, sugar, soy sauce and red chili pepper. Cook on low heat for 15 minutes, stirring occasionally. Stir in coconut milk; cook until heated thoroughly. Cool and refrigerate. Keeps well for 1 week. Makes 2 cups.
