Roy's Pan Roasted Filet of Beef

Ingredients

2 Tbsp. of oil
4 7oz. beef filets
2 Tbsp. sea salt
3 Tbsp. crushed rainbow peppercorns

Use a heavy duty pan for roasting your filets. Preheat oven to 400. Heat oil and coat filets with salt and peppercorns on all sides. Brown meat well on 2 sides. Place in oven for 6 minutes for a filet done medium (12 minutes for medium-well). Remove filet from heat and allow to rest for a couple of minutes before serving.

2 Tbsp extra virgin olive oil
4 cloves garlic, sliced thinly
2 large shallots, peeled and sliced thinly
2 Maui onions, julienned
12 oz. total of Oyster, Shiitake & Alii mushrooms, julienned
cup red wine
3 Tbsp lemon infused olive oil
3 Tbsp butter

Preparation

Heat a saut pan with extra virgin olive oil and brown garlic with shallots. Add Maui onions and mushrooms. Cook until almost tender. Deglaze pan with red wine. Reduce liquid by half. Add in lemon olive oil, butter and salt and pepper to taste. When butter is melted remove from pan and serve with filet of beef. Serve with your choice of starch.
