Chicken Chow Mein

Grandma New's recipe.

Ingredients

2 C cooked chicken 
2 C sliced celery - thin
1 1/2 C  sliced onion
1 can chinese vegetables
4 oz. mushroom caps
2 T cornstarch
2 T oil
1/8 t pepper
2 C broth
2 T cornstarch
3 T soy sauce
5 ox fried noodles or 1/1/3 C uncooked rice

Preparation

Brown chicken slightly in fat.  Add celery, onion and pepper.  Add chicken broth and cook covered until tender.  Add drained vegetables and drained mushrooms.  Heat to boiling.  Mix cornstarch with the soy sauce, and add to the hot mixture, stirring constantly.  Let simmer 2 minutes or until slightly thickened.  Arrange on a deep platter or vegetable dish garnished with scallions which have been cut lengthwise.  Serve with fried noodles and soy sauce, if desired.  Or with cooked rice.
