Stuffed Peppers

Grammies (Nellie Wehrman's) Recipe. I remember eating this as a kid in Hudson, on the farm, and all the way growing up. Marlene (Mom) added the Rotel Tomatos & green chilies (yum)

Ingredients

Stuffing Ingredients
6 green peppers
2 lb hamburger
1 C 1 cup of rice with 2 cups water (cooked)
onion  (chopped)
1 tspsalt
1 tsppepper
2egg (beaten)
Soup Ingredients
1 (26 oz.) canCampbells tomato soup
1 (26 oz.) can water (Follow Campbells soup recipe on can)
2 (16 oz.) can Tomatoes (diced)
3 T parsley
1 T thyme (fresh from garden?)
1onion (Sliced)
2 carrots (optional)
2bay leaves
1 (16 oz) can Rotel Tomatoes and Green Chilies (Optional)

Preparation

  1. Mix stuffing ingredients and stuff into peppers.
  2. Add peppers and soup ingredients to pot.
  3. Cook in liquid of Campbells tomato soup, water, 2 bay leaves, carrots (if desired) and sliced onion.
  4. You can add 1 can Rotel tomatos and green chilies (optional)
  5. Simmer for about 1 hour
  6. Eat
