Lasagna

Ok, . Start this by sauteing two onions (1 red and 1 white) chopped fine with 1/4 cup of oil in a dutch oven. Add 3 cloves of garlic. Next, add 1 - 1/2 cups of red wine and reduce down liquid. Then add the tomato ingredients per the internet recipe above. (oh ya, use brown sugar (not white) in the recipe.

Italian Sausage

   
1/4 Cup olive oil
1 red onion
1 yellow onion
3 cloves garlic
1 - 1/2 Cups Red wine
  salt
  pepper
   

1 - 28 oz can

crushed tomatoes
2 - 6 oz cans tomato paste
2 - 6.5 oz cans tomato sauce
1/2 Cup water (i didn't add this)
2 TBLS brown sugar
1 1/2 tsp dried basil
1/2 tsp fennel
1 tsp italian seasoning
1 TBLS salt
1/4 tsp black pepper
4 TBLS parsley
12 to 16 lasagna noodles
16 oz ricotta cheese
1 egg
1/2 tsp salt
3/4 lb mozzarella cheese
3/4 Cup grated parmesan cheese
   

 

Preparation

  1. Boil Italian sausage until done

  2. Heat a Dutch oven. Add oil and two chopped onions and garlic until onions are translucent.

  3. Add red wine. Reduce wine liquid down.

  4. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water.

  5. Stir in crushed tomatoes, tomato paste, tomato sauce. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.

  6. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.

  7. Preheat oven to 375 degrees F (190 degrees C).

  8. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish.

  9. Arrange 6 noodles lengthwise over meat sauce. Spread with one third of the ricotta cheese mixture.

  10. Top with a third of mozzarella cheese slices.

  11. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese.

  12. Repeat two more layers, and top with remaining mozzarella and Parmesan cheese.

  13. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.

  14. Bake in preheated oven for 25 minutes.

  15. Remove foil, and bake an additional 25 minutes.

  16. Cool for 15 minutes before serving.
