Apple Tapioca

Ingredients

1 C tapioca
2 1/2 C boiling water
1/2 t salt
8 apples (sour)
3/4 C sugar

Preparation

  1. Mix tapioca, boiling water, and salt.
  2. Cook in double boiler until transparent.
  3. Core, pare, and slice apples, put in buttered baking dish.
  4. Cover with sugar, then with tapioca.
  5. Bake at 350 degrees until the fruit is done (approximately 30 - 45 minutes).
  6. Serve with sugar and cream.
  7. Peaches may be used in place of apples.
