Lemon Pie

Preparation
Blind bake a
Pie Crust
Mix sugar, cornstarch, and water.
Cook till clear.
Beat egg yolks, then add small amount of cooked mixture so it won't curdle.
Add egg yolk mixture to pie filling and cook till boils.
Remove from heat and add lemon juice and lemon rind of 1 lemon, butter and salt.
Pour hot lemon filling into pie crust

Bake in oven at 350 for 10 minutes or so until the meringue starts to brown.
