Norwegian Apple Pie

Grandma New's recipe

Ingredients

1 egg
3/4 C sugar
1 t vanilla
1/4 t salt
1 t baking powder
1/2 C flour
1/2 C chopped walnuts
1 C diced apples

Preparation

  1. Beat egg, sugar, vanilla, salt and baking powder together until smooth and fluffy. 
  2. Beat in flour until smooth and well blended. 
  3. Stir in walnuts and apples. 
  4. Turn into a lightly greased 8" pie plate and bake 30 minutes.  
  5. Pie will puff up as it cooks, then collapse as it cools. 
  6. Serve warm, topped with a scoop of ice milk. 
  7. Yields 6 servings.
