4 pounds of apples (peeled, cored, and cut)
1 1/2 C water
1/4 C fresh lemon juice
3 Tbls dark-brown sugar
Cinnamon to your liking
Peel, core and slice apples.
In a large pot, combine apples, water, lemon and bring to a boil.
Reduce heat and simmer.
Add sugar & cinnamon (if using).
Simmer until apples are soft and falling apart, 25 to 30 minutes.
Mash or Puree in food processor or blender.
Process the jars in a hot water bath.
If below 1000' then the boiling water bath for Quarts should be 20 minutes or Pints for 15 minutes.
