Tomato Preserves

Grandma New's recipe

Ingredients

5 lb tomatoes (ripe)  (11 cups quartered)
8 C sugar
2 lemons (thinly sliced)

Preparation

  1. Scald, peel and quarter tomatoes.
  2. Add sugar and let stand overnight.
  3. Drain off juice and boil rapidly until it spins a thread.
  4. Add tomatoes and lemons and cook until thick and clean (about 10 to 15 minutes).
  5. Pour into sterilized jars and seal each jar as filled.
  6. Process in a boiling water bath for 10 minutes.
