Banana Nut Bread - Marlene

Ingredients


Directions

  1. Cream together shortening and sugar; add eggs and beat well. 
  2. Sift together dry ingredients;
  3. add to creamed mixture alternately with banana, blending well after each addition. 
  4. Stir in nuts.
  5. Pour into greased and sugared 9x5x3 inch loaf pan. 
  6. Bake in moderate oven (350 degrees) for 45 to
    50 minutes or until done. 
  7. Remove from pan; cool on rack. 
  8. Wrap and store overnight.

 Yield: 1 loaf

  1. Make sure leaviening agent (baking powder, soda or both) are not inactive.
    • Test powder by placing 1/2 teaspoon in bowl and pour 1/3 cup cold water on top. Should see bubbling.
    • Test soda by mix 1-1/2 teaspoons with 1 tablespoon vinegar and see significant bubbling.
  2. Cook until done
    • calibrate oven
    • preheat oven
    • place pan in the exact center
    • Use digital thermometer to test doneness. 200 to 205 degrees Fahrenheit.
