Banana Nut Bread - Marlene
Marlene Wuertz's Recipe.
Ingredients
- 1/3 cup
shortening
- 1/2 cup
sugar
- 2
eggs
- 1-3/4 cups sifted
all-purpose
flour
- 1 teaspoon baking
powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mashed ripe banana
- 1/2 cup chopped walnuts
Directions

Cream together shortening and sugar; add eggs
and beat well.
- Sift together dry ingredients;
- add to creamed mixture alternately with banana, blending well after each
addition.
- Stir in nuts.
- Pour into greased and sugared 9x5x3 inch loaf pan.
- Bake in moderate oven (350 degrees) for
45 to
50 minutes or until done.
- Remove from pan; cool on rack.
- Wrap and store
overnight.
Yield: 1 loaf

- Make sure leaviening agent (baking powder, soda or both) are not inactive.
- Test powder by placing 1/2 teaspoon in bowl and pour 1/3 cup cold water on top. Should see bubbling.
- Test soda by mix 1-1/2 teaspoons with 1 tablespoon vinegar and see significant bubbling.
- Cook until done
- calibrate oven
- preheat oven
- place pan in the exact center
- Use digital thermometer to test doneness. 200 to 205 degrees Fahrenheit.
