Cranberry Bread

Ingredients
- 1
egg
- 1/2 teaspoon salt
- 1 cup orange
juice
- 1-1/2 teaspoons grated
orange peel
- 1 cup
sugar
- 1 cup chopped fresh
cranberries
- 1/4 cup shortening,
melted
- 1/2 cup chopped walnuts
- 3 cups all-purpose flour
- 4 teaspoons baking powder
- Place egg, orange juice,
sugar, and shortening in bowl. Cream until light and fluffy. Stop and
- scrape bowl. Combine
flour, baking powder, salt, and orange peel. Add flour mixture to egg
- mixture, mixing about 15
seconds. Stop and scrape bowl. Fold in cranberries and walnuts.
- Spread batter in greased
and sugared 9x5x3 inch loaf pan. Bake at 350 for 55 60 minutes.
- Remove from pan and cool on
wire rack.
Yield: 1 loaf
