Date & Nut Bread

This is Marlene & Vic Wuertz recipe. We usually eat this during the holiday's, Christmas, Easter. Yum. Both Mom & Dad frequently made this recipe.

Grammie (Nell Wehrman) got this recipe from a neighbor across the street and shared it with Mom (Marlene). Marlene said this was a recipe that goes back to her childhood and she remembers they always make it for the holidays.

Ingredients

Ingredients
2 eggs (lightly beaten)
2 Tbls butter (softened) [or 4 T shortening]
1/2 tsp salt
2 tsp baking soda
2 C sugar (opt 1-1/2 Cups)
1 - 1/2 C

pitted dates

2 C boiling hot water
3 C all purpose flour
1 C walnuts (coarsely chopped)
   
1-1/2 tsp vanilla extract (opt)

 

Preparation

  1. Cut dates in quarters and pour boiling hot water over them and set aside.

  2. Cream sugar, shortening and eggs

  3. Sift salt, soda, sugar & flour

  4. Add date and water mixture to creamed mixture, then add sifted dry ingredients.

  5. Add nuts and mix well

  6. Pour into 2 greased & flour (or sugar) 8" x 4" loaf pans.

  7. Bake at 325 for 40-50 minutes.

  8. Cover loosely with foil if top browns too quickly.

Yield:  2 loaves (12 slices each)
