Ingredients

Main Ingredients (makes 5 lbs)
5 lbs pork (coarsely ground) -- Ask butcher to do a chili grind and only run through grinder 2 times
~3/4 lbs pork casings (Order 2 hanks for about 200 pounds of pork... then use left over of 1 hank on next batch)
Spices
1 - 1/2 TBLS Kosher Salt
1 TBLS Sugar
2 tsp

Pepper (black course ground) "Jason only used 1 tsp"

1 - 1/2 tsp nutmeg
1/2 tsp coriander
1/4 tsp celery seed
1/8 tsp marjoram
1 - 1/2 tsp ginger
2 tsp Chili flakes (This was too hot according to Jason 12/5/16) - "Jason omitted Chili Flakes"
1 Cup Beer (Irish Red or Nut Brown Ale)

Preparation

Preparation for stuffing:

  1. Mix the spices listed above together with the meat
  2. Stuff the mixture into the casings and twist off into 5 or 6 inch lengths.

Preparation for eating:

  1. Remove sausage from the freezer.
  2. Boil the sausage in water for 20 minutes and brown in frying pan.... or barbeque.... or roast over a fire.
  3. Add to bun, mustard, etc... for a yummy meal
