Salami

Grandpa Vic's recipe

Ingredients

Ingredients (makes 5 lbs)
5 lbs Hamburger
2 T Hickory Smoked Salt
1 T Ground Pepper (Coarse)
1 T Peppercorns
1 T Garlic Salt
5 tMorton Tender Quick Salt
2 1/2 t Mustard Seed

Preparation

  1. 1st day: Mix in large bowl and refrigerate.
  2. 2nd day: Mix well by hand and refrigerate
  3. 3rd day: Form into 6 rolls - place on rack in broiler pan in bottom of oven at 140 degrees or warm for 12 hours.   Turn every 2 hours
  4. Let cool & then wrap in freezer paper and freeze.
