Caldo(Turkey Soup)

recipe for a delicious soup. Usually made the day after
Thanksgiving or Christmas in order to use up the leftover turkey.
Ingredients
Leftover turkey |
Celery |
Carrots |
Onions |
Italian Dressing mix (comes in a packet) |
Broth (Caldo) |

lime |
green chilies |
celantro |
diced cheddar cheese |
rice |
tomatoes |
Preparation
- Cook turkey
bones, celery, carrots, onions and Italian seasoning in the broth
- Cook till vegetables are done
- Remove bones from soup
- Cook rice separately
- Chop the fresh green chilies, fresh tomatoes and fresh celntro and put into separate bowls
- Slice the fresh lime.
- Add soup to your bowl
- Add the rice to the bowl
- Pick the rest and add to your bowl as you like
