Caldo(Turkey Soup)

Vic & Marlene's recipe for a delicious soup.  Usually made the day after Thanksgiving or Christmas in order to use up the leftover turkey.

Ingredients

Leftover turkey
Celery
Carrots
Onions
Italian Dressing mix (comes in a packet)
Broth (Caldo)
 
lime
green chilies
celantro
diced cheddar cheese
rice
tomatoes

Preparation

  1. Cook turkey bones, celery, carrots, onions and Italian seasoning in the broth
  2. Cook till vegetables are done
  3. Remove bones from soup
  4. Cook rice separately
  5. Chop the fresh green chilies, fresh tomatoes and fresh celntro and put into separate bowls
  6. Slice the fresh lime.

  7. Add soup to your bowl
  8. Add the rice to the bowl
  9. Pick the rest and add to your bowl as you like
