White Bean
Tomato Soup
Ingredients
- 1 lbs. Baby Lima Beans, dry
- 2 -3 lbs Tomatoes, diced (vine
ripened)
- 4 oz. Olive Oil
- 10 oz. onions, diced (one med.
onion yellow or white)
- c. fresh basil, chopped
- 3 tsp. Sea salt
- tsp. Cayenne
- 5-6 garlic cloves, pressed
Preparation
Pressure cook lima beans for 7 minutes or cook
conventionally for 1 hours (fill up soup pot full with water).skim and
remove surface froth and Lima shells with Chinese strainer.
Saut onions in big pan on med-high to high heat
until half way done, add tomatoes, salt, basil, garlic (cook all for 10
minutes). Add Cayenne, olive oil, and Lima beans.
Heat up all ingredients together. Tastes
better the longer it stews.
