Chocolate Pie (Alberts)

This is Grandma New's (really good) Recipe

Ingredients

Double the following ingredients for a thicker chocolate deep dish 9" pie.
Suggest doubling the filling for thicker pie.

1 C sugar
1/3 C flour
1/4 t salt
2 C milk
2 egg yolks (slightly beaten)
2 T butter
2 oz Unsweetened chocolate
1 t

t vanilla

  Pie Shell
  chopped walnuts

Preparation

  1. Chop chocolate into little pieces (food processor works great because the smaller the pieces the quicker the chocolate will melt when you add the heat)
  2. Combine chocolate pieces, flour, sugar, milk and salt.
  3. Cook and stir the mixture over medium heat until it boils.
  4. Beat the egg yolks in a little bowl, while the chocolate mixture is heating up.
  5. Cook the chocolate mixture two minutes after it starts boiling.
  6. In order to prevent chucks of cooked egg in the pudding, stir one tablespoon at a time of the chocolate mixture into the little bowl of beaten egg yolks. (do this with 3 or 4 tablespoons of chocolate mixture)
  7. Now, add the the egg & chocolate back into the chocolate mixture that is cooking
  8. Cook and stir an additional two minutes more.
  9. Remove from heat and add butter and vanilla.

  10. Sprinkle chopped walnuts in the bottom of the pie crust (optional)

  11. Cool and pour into baked pie shell
  12. Add meringue and bake
